1/2 bunch of Curly Green Kale, washed, de-stemmed, and minced
Cucumber, sliced into small cubes, 1/4 cup
1 small Apple, sliced into small pieces
Sea salt/Himalayan Pink Salt
Chopped Cilantro leaves, a handful
Sliced red pepper
Depending on the ingredients I have. The simplest one I make is with the following ingredients:
Salt, pepper, and lemon juice to taste
1 tbs olive oil
1 tablespoons apple cider vinegar (or white wine vinegar)
1 tablespoon of yellow mustard paste or Dijon mustard
1 tsp of honey or maple syrup
Sprinkle a small pinch of sea salt and a few drops of olive oil over the kale and massage the leaves with your hands until the leaves are darker in colour. Add all the ingredients and mix well.
You can enjoy this hearty salad alone or with plant-based burger or anything else you desire.
